Summary

Today, it is no longer enough for the agri-food industry to simply “feed” the world; it must also and most importantly respond to new concerns regarding health foods. To develop innovative processes for the production and transformation of nutraceuticals and functional foods, it is necessary to evaluate their social impacts (on consumer health) and their environmental impacts (whence the need for eco-design). The Chair’s research program seeks to use electromembrane processes to improve the ecoefficiency of biofood production lines. Hence, the Chair’s research objectives are as follows:

  • to validate new electromembrane approaches for producing functional foods and bioactive fractions while reducing their impact on the environment;
  • to demonstrate the health benefits of the products and fractions produced and to understand the biological mechanisms brought into play;
  • to demonstrate the large-scale, long-term feasibility of the applications developed;
  • to evaluate the effects that changes based on the concept of eco-efficiency have on production lines.

The tools and data generated by this project will enable the industry partners to apply the research findings directly by helping them to develop nutraceuticals and functional foods that do not currently exist in the market, to improve the use of their co-products, and to eco-design their operations. The Chair’s partners could thereby increase their competitiveness and their respective market shares. To our knowledge, there is no other, equivalent research program on nutraceuticals and functional foods anywhere else in the world.

Dr. Laurent Bazinet has been a professor at Université Laval for over 14 years and is one of the international pioneers and leaders in the application of electromembrane processes to biofood components and nutraceuticals. He has developed extensive expertise on electrodialytic phenomena and their effects on biofood components. He is working on perfecting new ecological processes that save energy and are hence more eco-efficient.

Lastly, in addition to the training of highly qualified personnel, the establishment of the Chair will have many benefits for Canada. For example:

  • increased competitiveness of the industrial sector;
  • increased quality of life and reduced health-care costs;
  • discovery of new molecules and improved quality of products;
  • contribution to sustainable development.
