Summary

The NSERC–Novalait Industrial Research Chair on the Efficiency of Milk Processing Methods operates within a sustainable development context to increase the eco-efficiency of dairy processing. The objectives of this initiative are to:

  • develop new knowledge regarding the impact of milk processing methods on the state of milk constituents, as well as on resource use;
  • integrate that knowledge into the development of eco efficiency measurement and improvement tools for the milk processing industry; and
  • train highly qualified personnel that specializes in dairy processing and is prepared for the industry reality of eco-efficiency.

Our work targeted membrane separation methods, which are ubiquitous in dairy fluid processing, as a study model because they have a significant impact on resource use (water, energy and waste) in the dairy industry. The scientific programming therefore focuses on the development of new knowledge in two research streams.

Stream I: Improvement of method efficiency through improved use of natural milk constituents.

Stream II: Improvement of efficiency through optimization of membrane method performance.

Professor Yves Pouliot has been working at the Dairy Science and Technology Research Centre for 25 years. He has gained an international reputation for his work on milk-processing methods and its benefits to industry. Novalait Inc. is a private company, 50% of its share capital being held by the Producteurs de lait du Québec, and the other 50% being held by Quebec dairy processors, consisting of two main groups: the Agropur Cooperative and CILQ/Recherche Inc. (which represents private dairy processors). The mission of Novalait Inc. is to ensure, through its leadership and actions, the development and transfer of knowledge and innovations to promote the sustainable growth of the dairy industry in Quebec. The Chair's work will enable the project partners to apply the research results directly and thus to contribute to enhancing the efficiency of their operations and quantifying the effects.

The Chair operates within a sustainable development context to increase the efficiency of dairy-processing methods in order to optimize economic, environmental and social benefits for the Canadian dairy sector.
